I got a pleasant surprise when I went to Pho Mai for Vietnamese rice noodles (Pho) last time. I’ve discovered something new called Vietnamese crispy pancake. It had a hearty list of ingredients; chicken, pork, egg, bean sprout and shrimp. It looked absolutely stunning when it arrived at the table. It almost looked like a dry looking omelet, but when you bite into it it’s crispy and fragrant, it’s much better than an omelet. The next time I went there, I couldn’t help but noticed the seafood pan fried noodles at the table next to me, with its warm fragrant spilling over onto our table, that would be enough motivation for me to order one for myself. This dish used Yi Mein, a variety of flat Cantonese egg noodles made from wheat flour. The seafood on top was covered in a light sauce, and the noodles below must have been deep fried also, it was so crispy I couldn’t stop.
I’m at Pho Mai again as we speak, I’m thinking about what I should recommend you next time, stay tuned if you want to know!
